When Times Get Tough... I Go Adobo

When guests arrive without prior notice try whipping up this all-time pinoy favorite.

Adobo is probably one of the easiest pinoy meals to prepare. All you need is some meat, soy sauce, cane vinegar, water, bay leaf ,black pepper and lots of garlic. Put everything together in a pot and let it boil until meat is tender. Some prefer the slow-cook method but when in a hurry, go ahead and let it boil over high temperature. Just check the water level to make sure it doesn't burn.

Feeling adventurous?Try adding a couple of star anise or a dash of rosemary. I sometimes saute the garlic first in a little olive oil before adding the other ingredients.

This dish is usually served with steamed rice or you can add some greens like shredded cabbage
and carrots over asian noodles and you have pancit guisado, another pinoy comfort food.

Pinoys usually use pork in this dish but you can also try this with chicken and fish.

Healthier Pancakes

My daughters Idda and Bootsie love pancakes.
But as a health conscious mom, I really don't savor the idea that carbohydrates
and maybe faint, minute traces of protein are the only stuff they are getting from their fave breakfast food.

So when I saw Quaker Oats new line of flavored oatmeal, an idea popped inside my head. Why not add healthy and flavorful oatmeal to my usual pancake batter?

This is a cheap and almost effortless way of making healthier breakfast for my kids.
Just add 3 heaping tablespoons of flavored oatmeal to your batter and if you find the batter too thick, try diluting it with a little non-fat milk.

Banana-Honey tops our list.

for the love of the husband

My poor papito cringes at the sight of galunggong, paksiw na isda and any shrivelled, overcooked vegetable dish... unhappy memories of childhood.

So now that he's married and doing well in his business, he vowed to himself that he and his entire family ( including our maid and yaya) will never eat miserable, uninventive, totally deplorable stuff.

It's a good thing he found me. HAHA!

Cooking is not a daunting task if you have creativity on your side.
